Happy 2nd Birthday Kyle!
Two years ago today....you were born.
How time flies! Look how big you are now!
We love you so much Kyle!
We had a family party yesterday in Bellingham. All of your grandparents and aunts and uncles were there. We played outside, opened gifts, ate a yummy dinner and had cake.
Mommy made you a Sesame Street Cake...too bad she can't spell "Birthday" :)
Checking out all of your presents!
Your "special" cupcake. Wheat/Egg/Dairy free!
Yum! Yum!
You asked for a spoon so you could shove more in!
It was fun to watch you enjoy your special day!
We love you!

Grandma Katy
In Loving Memory of Grandma Katy!
January 7, 1920-September 19, 2008
Today our precious Grandma Katy went Home to be with Jesus.
We will always remember her! Katy was a hard worker. She was always busy doing something.
She had a passion for fishing and loved watching the Mariners. When we think of Grandma we see her in her kitchen making "Grandma Rolls" and baking cookies. She LOVED to feed her family. We always spent Christmas Eve at Grandma's house. Those memories will be cherished for a lifetime!
Troy lived with Grandma Katy for about a year when he was in college. This was when Troy and Christy were dating. Grandma Katy would do his laundry, pack his lunch, and make him breakfast every day. When we were engaged Troy said, "If this is what living with a woman is like...I can't wait to get married."
:)
I will never be able to live up to the service that Troy recieved from his loving Grandma!
We are so thankful for the time that we shared with Grandma Katy. It brings us great joy knowing that she got to meet Kyle. This is a photo from the first time she met Kyle when he was 4 weeks old.
We LOVE you Grandma Katy and we can't wait to see you again someday in Heaven!
Love,
Troy, Christy and Kyle

Trying new things...
Today I decided that it was time to get over my fear of baking with rice flour, garbanzo bean flour, and xanthan gum. I am not very good at trying new things because they freak me out. I am thankful for Bob's Red Mill products. They make great wheat free, dairy free, egg free products. So...we decided to make Orange Cranberry Muffins for breakfast today.
They turned out pretty good!
Kyle likes to mix the batter.
A little taste.
He is so proud. Time to bake them.
Yum! Yum!
I must say I am surprised that a muffin tastes so good when it has no egg, no milk, and no "regular" flour.
Who knew that an egg could be substituted with flax seed meal mixed with water???
I am ready to take on the challenge of baking a birthday cake for Kyle at the end of the month.
We will see how that turns out!
